Ingredients
  1. Flour 2 cup
  2. Sugar½ cup
  3. Baking Powder2 tsp
  4. Baking Soda½ tsp
  5. Salt½ tsp
  6. Peanut Butter 1 cup
  7. Light,Dark Corn Syrup ½ cup
  8. Eggs 2
  9. Milk 1 cup
  10. Chocolate Chips ¾ cup
Instructions
  1. Pre-heat oven to 180 degrees, grease and flour 95 inch loaf pan. In medium bowl, mix flour, sugar, baking powder, baking soda, and salt. In a bowl beat peanut butter and corn syrup until smooth, beat in eggs one at a time. Gradually beat in milk, stir in flour mixture, fold in chocolate chips just until moistened. Pour into prepared pan, bake for 15 mins, cool in pan for 10 mins, remove from pan, cool on wire rack.

  • 3 Potatoes, medium size ( washed and peeled them)
  • ½ tsp. Chili Powder
  • 1 tsp Cumin Powder
  • 1 tsp. Chaat Masala
  • Fresh Lemon, for juice
  • 1 Tomato, washed & diced
  • 1 Onion medium size, washed & diced
  • Tamarind Chutney
  • Mango Chutney or any chutney of your choice
  • Fresh Parsley Leaves
  • Coriander Leaves, for garnishing
  • Salt to taste
  • Pepper to taste

Aloo Chaat: Step-by-Step Method

1- Wash, peel and dice potatoes into almost 1 inch cubes.

2- In a pan, heat oil and deep fry the potatoes, til they turn golden brown.

Tip: Or you can simply boil potatoes rather than frying them.

3- Take out potatoes from the pan and let them drain in a Col-lander lined with kitchen paper.

4- Now in a bowl, place the potatoes, diced tomatoes and onion and t0ss them well. Now sprinkle red Chili powder, salt, pepper, cumin powder and Chaat Masala.

Dahi Baray

Ingredients

  • 1 cup yellow lentils, moong dal
  • ½ cup White lentils, mash dal
  • 1 onion, chopped
  • 1 tsp cumin seeds
  • 1 tsp baking soda
  • ½ tsp dry ginger
  • 4 cups yogurt
  • 1 cup water
  • 3 tbsp sugar
  • 2 tbsp chaat masala
  • Salt to taste

How to Make Dahi Baray

  1. Place yellow lentils, white lentils and cumin in a food processor.
  2. Blend all lentils until smooth.
  3. Add dry ginger, onion and baking soda in blended lentils and blend again until well combined.
  4. Now make balls with a large spoon and in a hot oil, fry baray until they become golden brown.
  5. Take out baray in a serving dish.
  6. In another bowl, beat fresh dahi or yogurt.
  7. Add little water and sugar in dahi and season with salt and chaat masala, mix all these masala well.
  8. Now pour this dahi or yogurt mixture over the baray.
  9. Sprinkle some more chaat masala over it.
  10. Dahi Baray are ready to serve chilled.

Serving Suggestion

  • You can serve dahi baray with imli ki chutney.

Ingredients

  • ½ kg boneless chicken, cubed

For Pakora Batter

  • 2 cups gram flour
  • ¼ bunch coriander and mint leaves
  • 2 tsp Pomegranate seeds
  • 1 tsp crushed cumin seeds
  • 1 tsp crushed coriander seeds
  • 1 tsp citric acid
  • 1 tsp red chili powder
  • Salt to taste
  • Oil for frying

Directions

  1. Take a large bowl, add chicken, gram flour, coriander and mint leaves in it.
  2. Add Pomegranate seeds, cumin seeds, coriander seeds and citric acid.
  3. Now add salt & red chili for seasoning chicken.
  4. Add little water in it and mix well until it become a thick pakora batter or paste.
  5. For frying pakoras, take a deep pan and heat oil in it.
  6. Drop a tablespoon of the batter in hot oil.
  7. Fry chicken pakora for 5-7 minutes or until golden brown.
  8. Remove them from oil and drain on kitchen paper.
  9. Chicken Pakora are ready to serve, hot.

Ingredients

For Samosa Filling

  • 250 gm Chicken Mince
  • 2 tbsp. oil
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp all spice
  • ½ tsp red pepper, crushed
  • 2 tbsp. coriander leaves, chopped
  • 4 green chilies, chopped

For Samosa Dough

  • 2 cups Flour
  • 6 tbsp. clarified butter
  • ½ tsp salt
  • Water to knead dough

Chicken Samosa Cooking Method

For the Samosa Filling

  1. In a pan, heat oil.
  2. Fry the ginger paste, garlic paste and the chicken mince in oil.
  3. Add the salt, black pepper, all spice and crushed red pepper. Cook this samosa mixture for 10 minutes or till the chicken is done.
  4. Take out, mixture in a bowl and add the fresh coriander and green chilies.

For the Samosa Dough

  1. In a bowl, mix the clarified butter, flour and salt.
  2. Gradually add water and knead it into hard dough.
  3. Make small balls from the dough and roll them out flat in the shape of small saucers.
  4. For making samosa, spread the chicken filling on the samosa dough and fold one side to form a D shape.

For Frying Samosa’s

  1. In a pan, heat oil for 3-5 minute on medium heat. And add samosa in it for frying.
  2. Fry chicken samosa’s from both side, until they turn light golden brown.
  3. Take them out in a serving plate and Chicken Samosa is ready to serve hot with ketchup or sauce of your choice.

Ingredients

  • ½ kg chicken mince
  • 1 tsp garam masala
  • 1 tsp cumin seeds (roasted and crushed)
  • 1 tsp green chilies (grinded)
  • 1 tsp salt
  • 1 tbsp. red chili pepper (crushed)
  • 1 tbsp. ginger/garlic paste
  • 1 tbsp. corn flour
  • ½ tsp white pepper
  • 3 tsp desiccated coconut
  • 2 tbsps. clarified butter (heaped)
  • 2 tbsps. (heaped) almonds (blanched and grounded)
  • 1, ½ tsp Coriander seeds (roasted and crushed)

For chutney

  • 1 cup  yogurt
  • 1 tsp green chilies (ground)
  • 1 tsp chaat masala
  • ½ tsp red chili powder
  • ¼ tsp salt

For paratha

  • 2, ½ cup flour
  • 1 tbsp. oil
  • ½ tsp salt
  • Water to knead

Hot and Spicy Reshmi kabab Roll Cooking Method

For Reshmi Kababs

  1. In a bowl mix the ground almonds, coconut, all spice, cumin powder, red chilies, white pepper, salt, coriander, green chilies, ginger/garlic paste, ghee and corn flour
  2. Mix in the chicken and let it marinate for a while
  3. Put the chicken on the skewers, grill or bake in oven for 20 minutes at 180 degrees C
  4. Burn a piece of coal
  5. Put the cooked chicken skewers in a pan, place the burning in the pan, cover with a lid for 1 minute and then keep it aside for later

For Chutney

  1. In a bowl, mix the green chilies, chaat masala, red chili powder, salt and yogurt
  2. Keep this aside for later

For Parathas

  1. In a bowl mix the flour, oil and salt
  2. Use water to knead it into a dough
  3. Make a paste of ghee and flour in a small bowl
  4. Make 8 balls from the dough and roll them out into the shape of small saucers
  5. Spread the paste on top of the dough, roll it up into a coil and again roll it out into the shape of a paratha about the size of a quarter plate
  6. Shallow fry in a flat frying pan

To Assemble

  1. Take the paratha
  2. Spread the chutney on top
  3. Layer with one reshmi kebab, pour more chutney on top
  4. Roll it up and serve

  1. Take bit hard bananas with skin and cut them into small pieces.
  2. In a dry pan, put all dry ingredients e.g. coriander & gram flour and fry them on a very light flame to prevent them from burning.
  3. Then add 1 tbsp oil when these ingredients are fry well.
  4. Remove the pan from the stove, and add sugar in it.
  5. Pour this material in a plate.
  6. Add salt and put aside to be cool this mixture.
  7. Now, place cuts in bananas and fill the mixture in them.
  8. Heat up ¼ cup oil in a pan and shallow fry these banana pieces.

  • 4 tbsp Mustard seeds ground
  • 3 tbsp Crushed red pepper
  • to taste Salt
  • 1 bottle Vinegar
  • 2 tbsp Jaggery
  • 1 tbsp Turmeric
  • 6-7 glass Water

Gajar ka Achar: Cooking Directions

  1. First of all peel out carrots, boil in water and cut into slices.
  2. Boil carats till tender.
  3. Now, remove extra water.
  4. Marinate with 2 tbsp ground mustard seeds, 1 tbsp crushed red pepper, 1 tsp turmeric and salt to taste.
  5. Boil 7 glasses water with 2 tbsp jaggery, 2 tbsp ground mustard seeds, 1 tbsp crushed red pepper, 1 tsp turmeric, salt to taste and 1 bottle of vinegar.
  6. When this water is boiled properly with ingredients put in it, bottle out.
  7. Now, keep this bottle of water and marinated carats in sun light for 2 days.
  8. Then, mix both with a dry spoon.
  9. Gajar Achar is ready now but you can use it after al least 3 days
Gajar ka Achar is very superb dish which is used in lunch and dinner times to add taste especially in summer season. You can make big quantity of Achar once and can use for long time.
