  3. Plain Flour 2 tbsp
  4. Salt ½ tsp
  5. Black Pepper ½ tsp
  6. Mustard ½ tsp
  7. Milk ½ cup
  8. Ingredients For Kebab
  9. Coriander Leaves (chopped) 2 tbsp
  10. Green Chilies (chopped) 1 tbsp
  11. Sweet Chili Sauce 1 tbsp
  12. Finely Chopped Capsicum 1 tbsp
  13. Chicken (boiled ,shredded) 1½ cup
  14. Rice Vermicelli (soaked) in water 1 cup
  15. Eggs 2
  16. Bread (sliced) 4
  17. Chili Garlic Sauce 1 tbsp
  18. Soya Sauce 1 tbsp
  19. Crushed Red Pepper 1 tsp
  1. Make very thick white sauce, mix with all the above ingredients, mix very well, make into kebabs, dip in eggs, roll in crumbs, and deep fry.

  • 1 kg mutton gosht
  • 3 tsp chili powder
  • ¼ tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp salt
  • 1 large onion (sliced)
  • 1 tbsp. ginger/garlic paste
  • 1 tsp black cumin (crushed)
  • 1 cup clarified butter
  • ½ cup wheat flour
  • ½ cup water

Chinoti kunna Gosht Cooking Method

  1. In a handi, melt the clarified butter.
  2. Fry the ginger paste, garlic paste, onions and mutton gosht.
  3. Add the chili powder, salt, coriander powder, turmeric and ½ cup water, cover with a lid and let the gosht cook for 30 minutes.
  4. Fry it well and add 3 cups of water. Let it cook till the mutton is tender.
  5. In a bowl mix the wheat flour with water to form a paste.
  6. When the mutton gosht is cooked through pour this wheat paste into the handi.
  7. Add the crushed black cumin.
  8. Cook Kunna Gosht for 15 minutes on a low flame till the oil starts to separate.
  9. Turn off the flame and Chinoti Kunna Gosht is ready to serve hot with Tandoori Roti or Naan.

  • ½ kg mutton
  • ½ kg rice
  • 1 capsicum (chopped)
  • 2 carrots (chopped)
  • 2 onions (chopped)
  • 4 tomatoes
  • ½ cup oil
  • ¼ cup pine nuts
  • 1 tsp salt
  • 1 tbsp. garlic (finely chopped)
  • ½ tsp white cumin (crushed)
  • ½ tsp coriander seeds (crushed)
  • ½ tsp black pepper

For Spice Mix

  • ¼ tsp saffron
  • ¼ tsp green cardamom (ground)
  • ¼ tsp cinnamon (ground)
  • ¼ tsp garam masala
  • ¼ tsp white pepper

For Sauce

  • ½ Stock cube
  • 1 tin canned tomato
  • 1 cup water
  • ½ cup onions, chopped
  • 1 tsp garlic, finely chopped
  • 1 tsp tomato paste
  • 1 tbsp. butter
  • ½ tsp salt
  • ½ tsp black pepper

Saudi Kabsa Cooking Method

  1. Soak the rice in water for 15 minutes.
  2. Heat oil in a pan.
  3. Add the mutton to the hot oil and sauté in till it turns golden brown.
  4. Add 4 cups of water and let the meat cook for 45 minutes or till the meat is tender.
  5. Now take out the mutton and keep the stock aside for later.
  6. In a pan, melt the butter.
  7. Add the garlic, onion, carrots, capsicum, salt, black pepper, cumin and coriander seeds.
  8. Mix in the tomatoes and the spice mix and let it cook for 5 minutes.
  9. Add the soaked rice, boiled mutton and the stock, cover with a lid and let it cook on a low flame for 15 minutes or till the rice cooks through.

For the Sauce

  1. Melt butter in a pan.
  2. Add the onions, garlic and canned tomatoes and fry it well.
  3. Add the tomato paste, salt, black pepper, stock cube and 1 cup water.
  4. Let this thicken on a low flame.

For Serving

  1. Dish out the rice on a big platter.
  2.  Put the mutton pieces on top.
  3. Sprinkle the pine nuts on top.
  4. Saudi Kabsa Rice is ready. Serve with the thickened sauce.

Cook time: 1 hour and 20 minutes

  • ½ kg mutton
  • ¼ cup oil
  • 1tsp oil
  • ½ tsp all spice
  • 1 tsp coriander powder

For bhagar:-

  • 2 tbsp. oil
  • ½ tsp mustard seeds
  • ½ tsp onion seeds
  • 1 cup yogurt
  • ½ bunch coriander leaves

For onion paste:-

  • 2 onions (large size)
  • ½ cup coriander leaves
  • 10 green chilies
  • 2 ginger
  • 10 cloves garlic

For achari masala:-

  • 1tsp Fennel seeds
  • 1tsp cumin seeds
  • ½ tsp mustard seeds
  • ½ tsp onion seeds
  • ¼ tsp fenugreek seeds

Green Achari Mutton Masala:-Cooking Steps

For onion paste:-

  1. In a clean blender put the onions, coriander leaves, green chilies, ginger and garlic and blend into a paste. Keep this aside.

For achari masala:-

  1. In a clean blender grind the fennel seeds, cumin, mustard seeds, onion seeds and fenugreek seeds. Keep this aside.
  2. In a blender, put the yogurt and coriander leaves and blend into a fine paste. Keep this aside.
  3. In a pan, heat oil and fry the blended achari masala for 1 minute.
  4. Add the onion paste and cook for 5 minutes while stirring the mixture occasionally.
  5. Mix in the mutton and let it cook for 10 minutes.
  6. Add the salt, all spice, coriander seeds and mix well,
  7. Put 1 cup of water and cook the meat in a pressure cooker for 15 minutes.
  8. Remove the cooker from the stove and stir in the yogurt paste.
  9. On a low flame, cook till the gravy boils,
  10. Remove from the flame and give bhagar. Serve it hot

  • 250 grams Minced mutton
  • ½ tsp Crushed black pepper
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • ½ tsp Turmeric
  • 25 grams Fried peanut powder
  • 3-4 cloves Chopped garlic
  • 1 medium sized piece Ginger
  • 1 cup Water
  • 1 Green onion
  • 2 tbsp Chopped coriander
  • 1 tbsp Lemon juice
  • 3 tbsp Yogurt
  •  2 Ice berg lettuce
  • Salt as required
  • 3 tbsp Oil

Mutton in Lettuce Cup: Cooking Directions

  1. Take a pan, heat up oil in it and fry chopped ginger & chopped garlic till turn to golden brown.
  2. Then add minced mutton in it and fry till its colour turns to change.
  3. Now, add peanut powder and other ingredients e.g.  ½ tsp crushed black pepper, I tsp coriander powder, 1 tsp cumin powder, ½ tsp turmeric, 1 green onion, 2 tbsp chopped coriander.
  4. Add yogurt and lemon juice.
  5. Cover the pan with a lid and cook for 10-15 minutes till meat is done.
  6. Remove the lid and cook till water dries.
  7. Lastly, divide the mutton mixture among prepared lettuce leaves.
  8. Wrap leaves around filling loosely and serve.

Mutton in Lettuce Cup is ready. This delicious appetizer can be served in family gatherings, parties and functions to increase their worth.

  • 300 gm Mince meat
  • 2 Onions
  • 2 Tomatoes
  • 6-8 Green chilies
  • ¼  bunch Fresh coriander
  • 1 Piece Ginger
  • ½  cup Oil
  • 1 tsp Turmeric powder
  • 1 tbsp Red chili flakes
  • 2 tbsp Ginger garlic paste
  • Salt to taste

Green Chili and Mince Masala : Cooking Directions

  1. First of all, take a pan, pour ½ cup of oil, fry 2 tbsp ginger garlic paste, then add 300 gram mince meat and mix well with the help of a ladle.
  2. As the colour of mince meat starts to change, add other ingredients e.g. 2 chopped onions, 2 chopped tomatoes, 6-8 green chilies, ¼ bunch fresh coriander and medium sliced ginger.
  3. Mix all ingredients finely and also add 1 tsp turmeric powder, 1 tbsp red chili flakes and salt to taste.
  4. Now, cook on a low flame till water dries and mince meat is done properly.
  5. Delicious Green Chili Masala is ready to serve.

You can enjoy the Green Chilli & Mince Masala can be presented with Roti or Rogani Nan and Green chutney. It can be a good addition at your lunch and dinner meals.

  • ½ kg Mutton
  • 1 cup Yogurt
  • 1 cup Oil / ghee
  • 4 Kashmiri red chili
  • 4 Onion chopped
  • 6 Almond
  • 6 Green cardamoms
  • 1 tsp Cumin seeds
  • 1 tsp All spice
  • 1 tsp Black cumin
  • 1 tbsp Ginger garlic paste
  • 1 tbsp Poppy seeds
  • 2 tbsp Whole coriander
  • 2 tbsp Desiccated coconut
  • Salt to taste

Hyderabadi Qorma: Cooking Directions

  1. Take a pan, heat 1 cup in it and fry 4 chopped onions till turn to golden brown.
  2. Remove from the stove and spread fried onions on a paper to absorb the extra oil and create crisp.
  3. Now, on the other hand, take a bowl and marinate mutton with 1 cup yogurt, ginger & garlic paste and salt to taste.
  4. Take a pot, boil 4 Kashmiri red chilies in little water, then blend with 2 tbsp whole coriander and add this blended mixture to mutton.
  5. With ur hand crush the fried onions and add into the mutton.
  6. In a pan, put marinated mutton on low heat and covered lid and
  7. Cook until water dries and mutton become tender.
  8. Now, add 3-4 cups of water and cook for 5 min more..
  9. Grind poppy seeds, black cumin, white cumin, desiccated coconut and 6 green cardamoms.
  10. Now add this ground mixture to the pan. And add ghee and simmer until qorma is done.

Very tasty Hyderabadi Qorma is ready. Serve qorma hot with Rogani Nan or Chapatti. It’s a traditional dish. It can be served in feasts, family gatherings or special parties as well.

  • 500 gm mince meat (mutton, beef or chicken)
  • 2 medium onions, finely chopped
  • 2 tablespoon ginger garlic paste
  • Salt to taste
  • Pepper to taste
  • 1 ½ teaspoon red chili powder
  • 1 teaspoon coriander
  • 1 cup yogurt
  • 1 teaspoon hot spices
  • 2-3 tablespoon gram flour
  • 2 small piece of coal
  • 1 tablespoon lemon juice
  • Oil or shortening
  • Coriander and ginger for garnishing

Dum Qeema: Cooking Method

  1. First of all wash the qeema or mince meat with water three to four times to make it fully clean, out of blood. Then put that in bowl, marinate with ginger garlic paste, hot spices, red chili powder, coriander powder, yogurt and salt and leave for about 1 or two hours.
  2. Take a pan and deep fry the onions till they turn golden brown, add the marinated qeema or mince and cook till it is extremely soft.
  3. When it’s tender, add the roasted gram flour and fry well.
  4. Place the hot coal over it and put 2-3 drops of oil on it for improving the taste of the food. Cover it at once with a tight fitting lid and leave that for 20-25 minutes.
  5. Dish out it and sprinkle fresh coriander leaves, green chilies and ginger to garnish, it would also add flavour and improve the look of the food.

Dum Qeema: Serving Suggestion

  • Serve “Dum Qeema” hot with tomato ketchup and green chatni.

  • 1 tbsp ginger paste, heaped
  • 1 tbsp garlic paste, heaped
  • 2 tsp Chili powder, heaped
  • ¼ tsp turmeric powder
  • ¼ tsp Black cumin seeds
  • ½ tsp Black pepper
  • ½ tsp all spices
  • 2 tbsp Coriander leaves
  • 2 tbsp Yogurt

Peshawari Karhai Ghosht: Cooking Directions

  1. Take a pan, heat up oil, add meat, tomatoes, salt, chili powder, ginger garlic paste, onion and cook it finely till the meat gets tender well.
  2. Then add coriander powder, turmeric, black pepper powder, black cumin seeds, all spice and cook for 10 minutes.
  3. Add yogurt and green chilies and cook well for few minutes till the oil floats, then add fresh coriander leaves and cover the lid on it for further 02 minutes.
  4. Peshawari style Karahi Gosht is ready to eat.

    1/2 Kilo Mince

  • 1 tablespoon Raw papaya
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 1 teaspoon Chilli powder, heaped
  • 1 teaspoon Salt
  • 1 teaspoon Garam masala
  • 3 Green Chilies, grinded
  • 2 tablespoons Coriander leaves
  • 1 Onion, chopped
  • 2 tablespoons Clarified butter
  • ¼ teaspoon Nutmeg, grinded
  • ¼ teaspoon Mace, grinded
  • ¼ teaspoon Green cardamom, grinded


  1. In a chopper, add mince with onion, raw papaya, ginger and garlic paste, salt, green chilies, chilli powder, garam masala, coriander leaves, clarified butter, green cardamom, nutmeg and mace.
  2. Chop this mixture until it become smooth.
  3. Leave mince to marinate for approximately 1 hour, in fridge
  4. Now make kabab in square shape, skewers and BBQ.
  5. Gola Kabab is ready to serve, with mint chutney or hot chili sauce.
