Bihari Pulao Recipe

Pulao is a traditional dish of Pakistan. Mostly this bihari pulao is made on special occasions. Try this pulao at home and enjoy the delicious taste of it.

Bihari Pulao Recipe by Chef Munawar Latif

Ingredients

  • 1 kg chicken or 16 pieces of chicken
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 20 grinded green chilies
  • 2 grinded raw onion
  • 1 tbsp grinded poppy
  • 1 cup yogurt
  • 1 tsp black pepper
  • 4 green cardamom
  • 1 stick cinnamon
  • 6 cloves
  • 1 bay leaf
  • 1 tsp cumin seeds
  • Half kg rice soaked for 30 minutes
  • Oil half cup
  • 2 ½ tsp salt

Cooking Method

  1. First, marinate the chicken.
  2. Marinate it with ginger garlic, grinded green chilies, salt, onion raw grinded, poppy seeds grinded black pepper, and yogurt for 1 hour.
  3. Heat some oil in a pan and add spices with marinated chicken.
  4. Fry it for 5 minutes.
  5. Cover the lid and cook it for 20 minutes till oil comes on top.
  6. Add soaked rice with 2 cups of water.
  7. Cover the lid again and cook it for 10 minutes on full flame.
  8. Lower the flame and put it on dum for 15 minutes till it’s done.
  9. Serve it hot.

Egg Fried Rice

Ingredients:

  • 1 kg Basmati rice
  • 1 cup Spring onion leaves chopped
  • 1 cup Capsicum chopped
  • a pinch Yellow color
  • 2 Carrot chopped
  • 6 Egg
  • 6 cloves Garlic chopped
  • ½ cup Oil
  • Few drops Sesame oil
  • 1 tsp White pepper powder
  • 1 tsp Sugar
  • 1 tbsp Flour mixed with chicken cube
  • 2 tbsp Soya sauce
  • 2 tbsp White vinegar
  • Salt to taste

Egg Fried Rice: Cooking Directions

  1. Take 1 kg basmati rice, wash 2-3 times and soak for 20 minutes. Its very necessary step because without soaking rice can not be properly done.
  2. Now, take a pot and put rice with 1 tbsp vinegar, salt to taste and water for boiling.
  3. As rice are done half. Remove all extra water and spread rice on a paper to dry and crisp.
  4. On the other hand, take a pan, pour half cup of oil, heat it up and fry 6 gloves of chopped garlic till golden brown.
  5. Take a bowl, beat 6 eggs with a pinch of yellow colour.
  6. Fry beaten eggs in oil.
  7. Now add 2 chopped carrot, 1 cup chopped capsicum, 1 cup chopped spring onion leaves, 2 tbsp soya sauce, 1 tbsp white vinegar, 1 tsp sugar and 1 tbsp flour mixed with chicken cube.
  8. Fry well and add to boiled rice.
  9. Stir fry over high flame.
  10. Finally add few drops of sesame oil.

Very awesome Egg Fried Rice is ready to eat. Serve hot with chicken Manchurian. This superb food can be taken in lunch or dinner times to make them taste rich. Preparation time: 40 minutes Yields: 3-4 Servings

Green Chicken Biryani

Ingredients

  • ½  kg Chicken
  • ½  kg Rice
  • ½  bunch Coriander
  • ½  bunch Mint
  • 250 gm Yogurt
  • 250 gm Green chilies
  • 2 Onions
  • 1 cup Clarified butter
  • 1 cup Peas
  • 100 gm Plums
  • Hot spices as required
  • 1 tsp Mace & Nutmeg powder
  • ½  tsp Cardamon powder
  • 2 tbsp Ginger garlic paste

Green Chicken Biryani: Cooking Directions

  1. Take a pan, heat up butter in it and fry onion, when onion are light brown, take out half quantity and put them aside.
  2. In half remaining onions, now add 2 tbsp ginger & garlic paste and ½ kg chicken and cook till chicken turns to white.
  3. Then add chopped ingredients e.g. chopped ½ bunch of coriander, ½ bunches of mint and 250 grams green chilies (which are chopped in a chopper and made a mixture.) and also include 1 cup peas.
  4. Cover the lid and cook on a medium flame till chicken is properly done.
  5. On the other hand, soak ½ kg rice for half an hour and then boil in pot, when rice is done for Biryani remove the flame.
  6. Now in chicken gravy, add a layer of yogurt, 1 tsp mace and nutmeg powder, 1/2 tsp
    cardamom powder, rest of the golden brown onions, 100 grams plums and 2 tbsp
    kewra. Put layer of rice over it. Pour rest of the clarified butter on rice and
    flatten it and cook for further10 to 12 minutes.

Tasty Green Chicken Biryani is ready to enjoy. Serve it with plain yogurt, raita and salad. This is happily enjoyed both in summer and winter seasons. Without Biryani, party menu is not completed. There are very easy steps to follow for the preparation of this green Biryani and the ingredients used are commonly available at home.

  • ½ tsp White cumin seeds
  • ½ tsp Black cumin seeds

Singaporian Rice

For chicken

  • ¼ cup Oil
  • ½ kg Boneless chicken
  • 1 tbsp. Ginger, finely sliced
  • 1 tsp Salt
  • 1 tsp Black pepper, crushed
  • 1 tsp Red chilies
  • 2 tbsps. Soya sauce
  • 2 tbsps. Red chili sauce
  • 4 tbsps. Ketchup
  • 1 tbsp. Corn flour
  • 1 red Tomato
  • 1 medium size Onion
  • 2 green Capsicums
  • 1 cup Cabbage, finely sliced
  • 1 Carrot, lightly boiled
  • 1 cup Spaghetti, boiled

For sauce

  • 1/3 cup Mayonnaise
  • Salt to taste
  • 2 tbsps. Ketchup
  • 2 tbsps. Vinegar
  • 1 tsp Sugar
  • ½ tsp red chilies, crushed

For garnishing

  • 8 Green chilies, sliced and fried
  • 4 tbsp. Ginger, sliced and fried

Singaporian Rice Cooking Directions

  1. Soak rice for half an hour
  2. Heat oil in a pot and fry star anise and white and black cumin seeds
  3. Add the rice, salt and peas and fry for a while
  4. Add 2 cups of water and cover the pot with a lid.
  5. When the water dries off, lower the flame and let the rice steam.

For Chicken

  1. Heat oil in a pot and lightly fry ginger.
  2. Add the chicken and stir fry.
  3. Add the salt, black pepper, red chills, ketchup, soya and chili sauce and let it simmer.
  4. Add the vegetables. Do not over-cook the vegetables.
  5. Add 1 cup of water and let it boil.
  6. In a small bowl mix in the corn flour with 1 tbsp. of water.
  7. Add the corn flour mixture to the chicken and let it thicken.
  8. Once the chicken has thickened, turn off the flame.

For Sauce

  1. In a bowl mix all the sauce ingredients and leave it aside.

Singaporian Rice Serving Suggestion

  1. In a serving dish spread out a layer of rice
  2. Pour the sauce over the rice
  3. Lay out the spaghetti on top
  4. Lastly, put the chicken mixture and top it with fired green chilies and ginger.
  5. Serve it hot.

Singaporean Rice

Ingredients

  • 150 gm Chicken
  • 2 cups Rice
  • Half packet fried noodles
  • 1 Capsicum
  • 1 Carrot
  • 1 Green shallots, cut off leaves
  • 1 Onion
  • ¼ Cabbage
  • 1 tbsp Ginger garlic
  • 4 cloves Garlic
  • 4-5 Green chilies
  • 1 tbsp Ground red chilli
  • 1 tbsp Cumin seeds
  • Pinch Turmeric
  • Salt to taste
  • Oil as required

Singaporean Rice: Cooking Directions

  1. First of all take a pan, boil water and add some turmeric also.
  2. Then add noodles in the boiled water and heat till noodles are done.
  3. Now, take a pan, hot up oil and fry boiled noodles.
  4. Pour water in a pan; add cumin seeds, salt and 2 tsp of oil in it and boil rice in hot water.
  5. On the other side, cut long slices of green chilies and thin slices of garlic, fry them lightly in hot oil.
  6. Cut carrot, capsicum, onion and cabbage into pieces.
  7. Take a pan, fry ginger-garlic paste in hot oil for about 2-3 minutes. Then add chicken to it and cook till turns to light brown and is done properly.
  8. Add all the cut vegetables and mix all well.
  9. Now add white pepper, black pepper, oyster sauce, Worcestershire sauce, salt, tomato ketchup and garlic sauce.
  10. In a bowl, mix corn flour with little water and add it to the sauce to make it thicken.
  11. Mix mayonnaise (cream), water and ground red chilli in a bowl.
  12. Take a tray, make a layer of boiled rice, and spread the mixture of cooked chicken & vegetables over it.
  13. Then make one more layer of the remaining rice over the mixture; spread the paste of cream, fried chilli and garlic over it.
  14. Make one layer of fried noodles over it.
  15. Delicious Singapore rice is ready.
  16. Serve hot with salad and raita,

Ingredients

  • 750 gram Chicken, cut into 16’s pieces
  • ½ kg white Rice
  • 1 tbps. and 1 tsp Salt
  • 1 ½ cup  Fried onions, Golden brown
  • ¾ cup Oil
  • 3 tsp Ginger paste
  • 3 tsp Garlic paste
  • 1 cup Yogurt
  • 1 tsp all-spice powder
  • 2 tsp chili powder
  • 2 tsp White cumin powder
  • 8 Green chilies, ground
  • ½ bunch Coriander leaves
  • 3 Potatoes
  • 1 tbps. Whole spices
  • 6 whole Green chilies
  • A pinch of Yellow food color
  • 1 tbps. Kewra essence

Bombay Biryani: Cooking Directions

  1. Take a bowl and marinate the chicken pieces in yogurt, green chilies, garlic paste, ginger paste, salt, chili powder, cumin powder, all-spice powder for at-least an hour.
  2. Boil rice with 1 tbps. salt and whole spices to develop the taste of all flavors finely in the rice. Boil the rice till half done.
  3. Now peel out potatoes and cut them in halves.
  4. Then in a frying pan, fry potatoes.
  5. Take a cup and dissolve a pinch of yellow food color in two tbps. of water.
  6. Heat oil in a pan, add marinated chicken with 1 cup fried onion and cook till tender.
  7. In a pan layer half of the rice, cover with chicken mixture, then potatoes, ½ cup fried onion, chopped coriander and green chilies.
  8. Now layer the remaining rice on top.
  9. Then add yellow color mixture, cover tightly and steam on very low heat for 15 minutes because at the stage rice are half boiled and if we put them on high flame, they will properly be cooked/boiled.
  10. When done, sprinkle kewra essence on top and cover the lid just for 2 minutes, then remove that pan from the stove.
  11. Delicious Bombay Biryani is ready.

Chicken Tikka Biryani

Ingredients 

  • 1 kilo Chicken
  • 1 tablespoon Red chili, ground
  • 4 tablespoons Vinegar
  • 1 teaspoon Hot spice powder
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 2 teaspoons Salt
  • 1/4 cup Oil
  • 1 teaspoon Black pepper
  • 1/4 teaspoon Orange food color
  • ½ kilo gram White Rice, boiled
  • 1 tablespoon All spices, whole

For Spice:-

  • 1 cup Oil
  • ½ teaspoon Turmeric powder
  • 1 cup Yogurt
  • 1 teaspoon Red chili powder
  • ½ teaspoon Coriander powder
  • 2 medium size Onions, chopped
  • 2 Tomatoes, chopped
  • 15 Mint leaves
  • 2 tablespoons Fresh coriander leaves, finely chopped
  • 4 Green chilies, chopped

Directions

  1. First, marinate chicken with vinegar, red chili pepper, salt, hot spice powder, ginger garlic paste, orange food color, and with black pepper for 30 to 40 minutes.
  2. Heat oil in a frying pan on medium heat for 2-3 minutes, now cook the chicken until it becomes shallow and tender.
  3. Now stems the chicken with coal and cover it from all sides.
  4. In a separate frying pan heat oil and add onion in it and cook it until they become light brown.
  5. Now add chopped tomatoes, red chili, salt, turmeric powder, coriander and cook it well.
  6. After 5 minutes, add yogurt in it and make a thick mixture paste.
  7. Now add coriander leaves, mint leave and green chilies and steamed chicken in this mixture paste.
  8. In a separate pot, boil the rice by adding salt and whole spice.
  9. Take a separate dish and make one layer of chicken gravy and another layer of boiled rice and repeat this process until all chicken and rice mixture is done. Steam rice for 5 minutes.
  10. Turn on the flame and mix well without breakage of rice.
  11. Tikka Biryani recipe with chicken is ready to serve, hot!

Ingredients:

  • 2 cubes K&N’s chicken stoke
  • 1 1/2 cup Rice
  • 3 cups Water
  • 3-4 tablespoon Oil
  • 1/2 cup Green Peas, boiled
  • 1 Carrot, chopped
  • 1 Green Capsicum, chopped
  • 5-6 Baby Corn, cut in half
  • 5 Mushrooms, sliced
  • 1 tablespoon Black Pepper, ground
  • 4-5 cloves Garlic, chopped
  • Salt to taste

Vegetable Fried Rice: Step-by-Step Directions

  1. In one cup water add two cubes of K&N’s Stok, stir till it dissolves completely. This makes one cup of broth for rice.
  2. Put 2 cups of water and cup of broth in a pan and boil rice. Let rice cool.
  3. Heat oil in a pan. Add vegetables with garlic and stir fry for 2 minutes. Add black pepper and mix.
  4. Put stir fried vegetable in a wok on medium flame. Add boiled rice with Stok. Toss to mix and heat rice.
  5. Vegetable Fried Rice Recipe is ready to serve immediately.
