Hot Peri Peri Sauce

Ingredients

  • 6 long Talhar mirch/Kashmiri chili (soaked overnight in 1 cup hot water)
  • ¼ cup whole red chilies, soaked overnight in 1 cup hot water
  • 2 tbsps. ground red chili
  • 1 tsp garlic crushed
  • 1 tbsp. mustard seeds, crushed
  • 1 tbsp. coriander seeds, crushed
  • ½ cup white vinegar
  • 1 small onion (chopped)
  • 2 tbsps. lemon juice
  • ½ tsp citric acid
  • ½ cup oil

Hot Peri Peri Sauce Recipe  Cooking Method

  1. In a bowl combine all the sauce ingredients together.
  2. Put in a blender and blend for 5 minutes or till it forms a smooth paste.
  3. Pour in a clean sterilized jar.
  4. Store this hot peri peri sauce in the refrigerator.

Pepper Steak With Brown Sauce

Ingredients

  • 2 piece beef under-cut (weighing 8 ounces each)
  • 2 onions (sliced)
  • 4 mushrooms (sliced)

Marinate

  • ½ tsp black pepper corns (crushed)
  • ½ tsp salt
  • ½ tsp mustard paste
  • 1 tbsp. Worcestershire sauce
  • ½ tsp garlic paste
  • 2 tbsps. oil

For brown sauce

  • 1 tbsp. oil
  • 2 tbsps. butter
  • 2 tbsps. onion (chopped)
  • 1 tbsp. plain flour
  • ½ tsp white pepper
  • 1 cup chicken stock (1/2 tsp chicken powder or ½ chicken cube dissolved in 1 cup water)
  • 1 tbsp. brown sugar

Pepper Steak With Brown Sauce Cooking Method

  1. Wrap the steak pieces in a clean wet towel and flatten with the help of a meat tenderizer
  2. In a bowl mix the black pepper, salt, mustard paste, Worcestershire sauce, garlic paste and oil
  3. Rub this over the steaks are let t marinate

For brown sauce

  1. In a pan, melt 1 tsp of sugar and let it burn a little.
  2. Once the sugar is burnt add ½ cup of water and let it cook for 2-3 minutes
  3. In another pan heat 1 tbsp. of butter with oil
  4. Add the chopped onions and fry till golden brown
  5. Add the flour, white pepper and chicken stock and mix well
  6. Add 1 tbsp. of burned sugar syrup and mix it well

For fried onions

  1. In a pan melt 1 tsp butter with 1 tsp oil
  2. Sauté  the sliced onions with 1 tbsp. brown sugar
  3. Add 1 tbsp. of Worcestershire sauce and mix it well

For steaks

  1. In a grill heat 2 tbsps. of oil and add the steaks
  2. Drizzle with a little Worcestershire sauce while the meat cooks
  3. Keep checking the meat by pricking it with a knife
  4. When the steaks are nearly done, drizzle the brown sauce over them
  5. Add the mushrooms and let the meat cook
  6. Take a sizzler plate and heat it on the stove
  7. Drizzle a little oil in the plate and add the fried onions
  8. Place the steak carefully on the plate and drizzle with extra brown sauce
  9. Sprinkle some freshly ground black pepper and serve with boiled vegetables, mashed potatoes or fries

Note: for well done, cook the steaks for 8 minutes, for medium rare, cook for 5 minutes and for rare, cook for 3 minutes
