Chicken broast


  • ½ kg Chicken, with skin
  • 4 tbsp. Papaya paste
  • 4 Eggs
  • 1 cup rice flour
  • ½ cup white flour
  • ½ cup corn flour
  • 1 tsp mustard powder
  • 1 tsp garlic powder
  • 1 tbsp. white pepper
  • 1 tbsp. Red chili powder
  • 1 tbsp. Chinese salt
  • 2 tbsp. chicken powder
  • Vinegar as required
  • Oil for fry
  • Salt to taste

For Broast Garnishing

  • 3-4 lettuce leaves
  • 1-2 Onion (sliced)

Chicken Broast Cooking Method

  1. Cut chicken in 8 pieces.
  2. In a bowl mix vinegar, salt, papaya paste and red chili.
  3. Now marinate chicken breast in it for an hour.
  4. In a bowl mix white flour, corn flour, rice flour, chicken powder, white pepper, garlic powder, mustard powder salt and Chinese salt. Coat the chicken pieces in it.
  5. Then dip chicken breasts in beaten eggs and repeat.
  6. Fry it on medium flame until broast turns golden brown.
  7. Dish out chicken broast and garnish it with salad leaves and onion and serve with sauce.

Cook Time: 35- 40 Minutes

Preparation Time: 1 Hour + 15 Minutes

  • 1 whole chicken, Skin on
  • 2 tbsps. lemon juice
  • 1 tbsp. salt
  • 1 egg
  • 2 tbsps. milk
  • 1 tsp paprika
  • 2 cups flour
  • 1tsp Chinese salt
  • ½ tsp mustard powder

For Broast Sauce

  • ½ cup yogurt
  • 1 potato, boiled
  • 1 tsp garlic paste
  • 2 green chilies
  • ½ tsp salt
  • 1 tbsp. mayonnaise

For the Chicken

  1. Marinate the chicken with salt and lemon juice and let it rest.
  2. In a big bowl, beat milk and an egg together.
  3. In another bowl, mix the paprika, Chinese salt and mustard powder into the flour.
  4. Dip the chicken broast into the milk batter.
  5. Then coat the chicken pieces with the flour.
  6. Repeat this twice and deep fry it for 20 minutes on a low flame.
  7. Take the chicken out when fully cooked and serve with broast sauce.

For the Sauce

  1. Mash the potato into small bits.
  2. Add the yogurt, garlic paste, green chilies, salt and mayonnaise.
  3. Blend the ingredients into a smooth sauce.
  4. Pour it out in a bowl and serve with the chicken broast.

Masala Chicken Broast


  • ½ kg Chicken, skin on
  • 1 tablespoon Red chili powder
  • 1 tablespoon Red chili flakes, crushed
  • 1 tablespoon Turmeric powder
  • 2 tablespoon Ginger
  • 2 tablespoon Garlic paste
  • 4 tablespoon Oil
  • Salt to taste

For Batter

  • 1 beaten Egg
  • Juice of 1 lemon
  • 1 cup Plain flour
  • ½ tsp Black pepper powder
  • ¼ tsp Cardamom powder
  • 4 tablespoon Plain flour
  • 4 tablespoon Corn flour
  • 2-3 tablespoon Oil
  • Water as required
  • Salt to taste

Masala Chicken Broast Cooking Method

  1. For making broast, cut chicken into 8 pieces.
  2. In a pan, heat 4 tablespoon of oil and fry the ginger paste, garlic paste and chicken, stir for 3-4 minutes.
  3. Lower the flame and add the chili powder, chili flakes, turmeric, salt and water.
  4. Cover the pan with a lid and let it cook for 15-20 minutes or till the chicken broast is tender.
  5. Let the excess water dry on a high flame.
  6. In a bowl add 4 tablespoon of plain flour, corn flour, black pepper, cardamom powder, lemon juice, egg and salt.
  7. Mix into a smooth batter or masala.
  8. Dust the chicken with flour and coat with the batter.
  9. Deep fry the chicken pieces on a low flame till golden brown.
  10. Masala Chicken broast is ready to serve hot.

Al-Baik Broast Chicken with fresh Yogurt


  • 1 whole Chicken with skin, cut into 8 pieces
  • 2 Eggs
  • 1 cup Corn Flour
  • 1/2 Cup self-raising flour
  • 1 teaspoon Dry Ginger Powder
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Salt
  • ½ teaspoon Cinnamon Powder
  • 2 tablespoon Paprika Powder
  • 3 tablespoon Lemon Juice
  • 3 tablespoon Oil


  1. Take a bowl and mix dry ginger power, garlic powder, salt, cinnamon powder, paprika, lemon juice and oil together and make a thick paste.
  2. Marinate chicken pieces with all this material for 4 to 6 hours.
  3. Take prescribed quantity of self raising flour and corn flour and mix them together.
  4. Dip the marinated chicken pieces in the eggs first and then in the mixture of self raising powder & corn floor for few minutes.
  5. Deep Fry the coated chicken pieces, keep covered with some lid on a light flame to get fine results (finely cooked chicken).
  6. Cook the chicken broast until its color is changed to golden brown.
  7. Now remove from the stove, dish out this delicious broast and serve this with hot French fries and tomato or garlic sauce.

Cooking Time:  40 Minutes
