Little Chocolate Chip Coffee Cups

Ingredients
  1. Flour 1½ Cup
  2. Baking Powder ¾ tsp
  3. Salt ½ tsp
  4. Baking Soda ¼ tsp
  5. Brown Sugar ¾ cup
  6. Butter 4 ounce
  7. Fine Sugar ¼ cup
  8. Vanilla 1 tsp
  9. 2 eggs
  10. ½ cup + 3 tbsp milk
  11. Chocolate Chips 1 cup
  12. Coffee 1 tsp
Instructions
  1. Pre-heat oven to 180 degrees, grease and flour 18 mini bandit cups, mix flour, baking powder, salt and baking soda, keep aside. Beat butter with brown sugar, fine sugar and vanilla until fluffy. Add in eggs one at a time, until well blended, add flour mixture alternately with milk, beginning and ending with flour. Beat on low speed fold in half cup chocolate chips, fill bandit cups, and bake for 18 mins, remove, cool for 5 mins and remove on wire rack. Mix remaining half cup chocolate chips and 3 tbsp milk in a bowl microwave on high for 30 seconds. Mix again microwave for 15 seconds. Drizzle evenly over coffee cakes.

  • 250 gm Gram lentil
  • 1 tsp Salt
  • 1 ½ tsp Chili Powder
  • 1 tsp Turmeric Powder
  • 1 bunch Soya, chopped
  • 3 Potatoes, cut into small cubes.
  • 1 Onion, sliced

Cooking Method

  1. Boil gram lentil with salt, chili powder and turmeric.
  2. When gram lentil half done add potato cubes.
  3. Cover the lid and cook until potatoes become tender.
  4. Add already chopped soya and cook for 10 minutes.
  5. For Tarka: Now in a pan heat ½ cup oil and fry onion until they turn light golden.
  6. Add fried onion tarka at the top of daal and serve with paratha.

Spicy Stir Fried Eggplants

Ingredients

  • ½ kg eggplants (small, round ones cut into quarters)
  • 8 red chilies (whole)
  • 15 curry leaves
  • ½ cup oil
  • 1 tsp white cumin
  • 1 tsp onion seeds
  • 1 tsp garlic paste
  • 1 tsp salt
  • 1 tbsp. coriander seeds
  • 1 tbsp. sugar
  • 1 tbsp. mango pickle with masala
  • ½ tsp fennel seeds
  • ½ tsp mustard seeds
  • 2 tbsps. fried onions (ground)
  • 2 tbsps. desiccated coconut
  • 4 tbsps. tamarind pulp

Spicy stir fried eggplants Cooking Directions

  1. In a pan roast the coriander seeds, red chilies, desiccated coconut, white cumin, fennel seeds and onion seeds
  2. Grind these together
  3. In a pan heat oil and add the mustard seeds and curry leaves
  4. Add the garlic paste and spice mix
  5. Fry these well by adding little water
  6. Add the eggplants, water and salt
  7. Cover with a lid and cook for about 15 minutes
  8. Add the tamarind pulp and mango pickle
  9. Simmer for 5 minutes and serve

Palak Paneer

Ingredients:-

  • ½ kg Palak, boiled
  • 200 gm Paneer or Cottage Cheese, cut into cubes
  • 2 tbsps. Soya, finely sliced
  • 1 onion, finely sliced
  • ½ tsp salt
  • ½ white pepper
  • ½ tsp red chili powder
  • 2 tbsps. butter
  • 1 ½ cup milk
  • ½ cup cream

Palak Paneer Cooking Method

  1. Melt butter in a pan and fry the Paneer to get a light golden brown color. Take it out and keep aside.
  2. Fry the onion till golden brown.
  3. Add the soya, Palak and 1 cup milk. Let it cook for 4-5 minutes on a high flame.
  4. Blend these ingredients in a blender.
  5. Add cream, salt, white pepper, chili powder and ½ cup milk to the Palak mixture.
  6. Shift it back to the pot and cook till the gravy thickens.
  7. Place the Paneer or cheese cubes on top of the gravy.
  8. Palak Paneer is ready to serve, hot.

Ingredients

  • 300 gram Boneless Chicken
  • 1 Capsicum, cut into cubes
  • 1 Carrot, cut into cubes
  • 1/4 Cabbage
  • 2 Spring onions
  • 1/4 bunch Fresh coriander
  • 10 Garlic cloves
  • 2 tablespoons Corn flour
  • 1 tablespoon Red chili flakes
  • 4 tablespoon Chili garlic sauce
  • 2 tablespoons Worcestershire sauce
  • 3-4 Green chilies, finely chopped
  • 1 tablespoon crushed black pepper
  • Salt to taste
  • 1 cup Water
  • 4 tablespoons Oil

Vegetable Garlic Chicken : Step-by-Step

  1. Cut boneless chicken into pieces.
  2. Finely chop capsicum, cabbage, carrot, spring onions, green chilies, fresh coriander leaves.
  3. Slice 10-12 garlic cloves.
  4. In a pan heat oil and saute sliced garlic, until it become light brown.
  5. Add boneless chicken in the pan and cook for 5 min.
  6. Now add all vegetables (capsicum, cabbage, carrot, spring onions, green chilies, fresh coriander leaves) and cook for another 5-6 min.
  7. Add salt, crushed black pepper, worcestershire sauce and chili garlic sauce and continuously stir for 2-3 min.
  8. Then add water and when water begins to boil, add corn flour and stir continuously.
  9. Increase the flame light and saute chicken and vegetables for 3-4 min.
  10. Vegetable Garlic Chicken is ready to serve, hot

    1 bunch Spinach

  • 1 onion sliced
  • ½ cup Gram flour
  • ½ cup Rice flour
  • 4 to 5 cloves Garlic
  • 150 gm Cottage cheese
  • 1 tsp Red chili powder
  • 1 tsp Cumin powder
  • ½ tsp Turmeric powder
  • ½ tsp Carom seed
  • 1 tsp Whole coriander
  • 1 tsp Mustard seed
  • Oil for fry
  • Salt to taste

Directions

  1. In a bowl add 1 sliced onion, ½ cup gram flour, ½ cup rice, 4 to 5 garlic cloves, 150 gm cottage cheese, 1 tsp red chili powder, 1 tsp cumin powder, ½ tsp turmeric powder, ½ tsp crushed carom seed, 1 tsp whole coriander, 1 tsp mustard seed and salt to taste to mix and make smooth batter.
  2. In the end add 1 bunch spinach and 150 gm cottage cheese to mix.
  3. Now fry pakora’s in hot oil until golden brown.
  4. Palak Paneer Pakora is ready to serve hot, with chili garlic ketchup or green mint chutney.

  • 2 tbps butter
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes, crushed
  • 1/8 teaspoon pepper
  • 6 cups coarsely cabbage, chopped
  • 1 tbps water

Fried Cabbage: Cooking Method

  1. Take a large skillet and melt butter on medium heat.
  2. Add salt, pepper, pepper flakes and sugar in it and stir.
  3. Now add the water and cabbage in it.
  4. Cook cabbage for 5-6 min or until cabbage will become tender.
  5. Fried Cabbage is ready to serve.

Preparation Time: 20 min.

Yield: 6 Servings
